The owner of Goldberg’s Famous Bagels said the two new stores he’s launching on the North Fork — the first in downtown Riverhead, the second in Mattituck — will both be open by May 1.

“We have all the plumbing in the ground at the Riverhead store,” Mark Goldberg said Friday afternoon. “And the store in Mattituck is an existing shop so it’ll be easy to fix up.”

In October, the Riverhead Industrial Development Agency voted 4-0, with one member absent, to approve Goldberg’s Famous Bagels as a tenant in the former Woolworth building on East Main Street.

One month later, the company announced a second location would be coming soon to the Waldbaum’s shopping center on Main Road in Mattituck in the space formerly occupied by North Fork Bagel Co.

Goldberg’s Famous Bagels currently has 11 stores in New Jersey, as well as one store each in Southampton, East Hampton and Montauk.

The main change Mr. Goldberg said he’s making to the Mattituck space is to replace the property’s current rack oven to a “boil-and-bake” oven.

“It’s an old-fashioned [oven],” he said. “I have one at the Southampton, East Hampton and Montauk stores.”

An East Hampton resident, Mr. Goldberg said he’s also in the process of building another Goldberg’s Famous Bagels store in Bridgehampton.

He said he expects construction at that store to be finished around the same time as the Riverhead and Mattituck locations.

“I think it’s going to be real good,” Mr. Goldberg said of expanding the company to the North Fork. “It’s real neat up there and it will be nice to bring quality bagels to the area.”
